Carrara Wagyu Beef Short Ribs, marble score 9 is one of the highest Wagyu grades. Check out the marbling in this video and you can see why. We cut these and cook them slowly to make burnt ends (if you’re in the US) or beef marshmallows (for phrase we here more in NZ). They are absolutely amazing, moreish and a must try!
